 Stuffed Vegetables

With EasyCook
  • Zucchini
  • Tomatoes
  • Colorful bell peppers
For the filling:
  • 1 cup Rice, rinsed and drained
  • 3 tbsp Oil
  • 1 Small onion, chopped
  • 1 Garlic clove
  • Cilantro, chopped
  • Salt, pepper
  • 1 tbsp Tomato paste
  • Mix everything well
For the sauce:
  • 1 Small onion, chopped
  • 2 Garlic cloves
  • 1 Tomato, finely chopped
  • Salt, soup powder, ½ tsp Turmeric, 1 tbsp Sweet paprika, Pepper
  • 2 tbsp Tomato paste
  • Set 2 stages ion advance on the PRO setting of the EasyCook: Stage 1 160*c for 20 minutes and stage 2 100*c for 45 minutes.
  • Add 2 tbsp oil with chopped onions  and garlic and close the lid. Stir occasionally. When the onion is golden, add the tomato, stir and close the pot for 2 minutes. Add water and seasoning. Stir well, close the lid and wait until the sauce boils. Taste and adjust seasoning to your liking.
  • In the meantime, remove the pulp of the zucchinis, peppers and tomatoes (don’t throw out, add to the sauce). Stuff the vegetables nicely with the rice mixture and arrange the vegetables in the pot. The water should rise to half of the height of the vegetables.
  • Close the pot and occasionally pour some of the sauce into the vegetables. Cook until ready.
Bon Appetit!
