 Round Zucchinis Stuffed with Rice and Ground Beef

Using the EasyCook multi-cooker
  • 7-8 Round zucchinis, with the top cut off to serve as a lid and the insides scooped out.
For the filling:
  • 200g Ground beef
  • ⅓ cup Basmati rice, rinsed and drained
  • 1 Red tomato, shredded or chopped
  • Colorful peppers, chopped (Hot peppers go well too)
  • 1 Stalk of celery, grated or chopped
  • 3 tbsp Fried onion flakes
  • A handful of parsley, chopped
  • A handful of cilantro, chopped
  • Spices: Salt, Ground pepper, Oil, Paprika, Turmeric, some Soup powder {optional)
  • ½ Lemon, squeezed
  • Mix all the ingredients and stuff the zucchinis.
  • Arrange stuffed zucchinis in the EasyCook pot.
  • Add water to the pot until zucchinis are almost entirely covered.
  • Add 1 tbsp of tomato paste, paprika, salt, sliced leeks, 1 tsp of onion flakes, ½ tsp of sugar and a tbsp of Oil.
  • Cook on 110-120*c for 40min, until zucchinis are soft.
