- ½ kg Kadaif “hairs”
- 100g Coconut oil
- 4 tbsp Castor sugar
- 400g Ricotta cheese
- 100g Soft goat cheese
- ½ cup Sugar
- Lemon zest
- Chopped green pistachios (Garnish)
Add 2 tbsp castor sugar to the kadaif. Melt ½ of the coconut oil in a pot.
In a separate bowl, mix the cheeses, 2 tbsp castor sugar and lemon zest.
Place ½ of the kadaif in the EasyCook pot with some coconut oil.
Select the BAKE setting for 1 hour and 20 minutes.
Bake for 30 minutes (so that the kadaif is no longer white).
Spread the cheese layer evenly on top.
Add the remaining kadaif and coconut oil on top and flip so that the new kadaif layer is on the bottom.
Flatten and bake until the end of the program.
Boil 1 cup water with ½ cup sugar and soak the knafeh in the syrup.
Garnish with pistachios and serve.
